It’s been hot, Hot, HOT!\u00a0 Even so, this Gazpacho recipe is so good that I would eat it in the dead of winter.\u00a0 Oh!\u00a0 That’s a lovely thought!\u00a0 Did\u00a0I mention it’s also ridiculously easy?\u00a0 Well, it is.\u00a0 My 4 year old great niece helped me make this and loved the end result.\u00a0 We think you will, too.\u00a0 If you have a garden full of homegrown tomatoes, absolutely use those in place of the canned ones!\u00a0 My garden is giving me some, but not enough – so we compromised.<\/p>\n

Into a blender or food processor:<\/p>\n

2 peeled cucumbers, chopped into chunks<\/p>\n

1\/2 red bell pepper, chunked<\/p>\n

1\/2 purple onion<\/p>\n

2 scallions<\/p>\n

1 Tbsp. parsley<\/p>\n

2 Tbsp. cilantro (optional – you know if you like it!)<\/p>\n

15.5 oz. can organic tomato sauce<\/p>\n

5.5 oz. Spicy Hot V8 juice<\/p>\n

1\/4 cup good olive oil<\/p>\n

2 Tbsp. balsamic vinegar<\/p>\n

1 tsp. Worcestershire sauce<\/p>\n

1\/2 tsp. Himalayan or Celtic salt<\/p>\n

1\/4 tsp. freshly ground black pepper<\/p>\n

Blend all ingredients together.\u00a0 Taste for seasonings.\u00a0 Serve with desired toppings of:<\/p>\n

chopped avocado<\/p>\n

minced parsley<\/p>\n

minced cilantro<\/p>\n

sour cream or kefir<\/p>\n

chopped boiled egg<\/p>\n

minced cucumber<\/p>\n

drizzle of olive oil or balsamic vinegar<\/p>\n
