{"id":405,"date":"2014-04-11T14:20:57","date_gmt":"2014-04-11T14:20:57","guid":{"rendered":"http:\/\/www.downdogsaltydog.com\/?p=405"},"modified":"2015-07-08T16:05:48","modified_gmt":"2015-07-08T16:05:48","slug":"asparagus-frittata","status":"publish","type":"post","link":"http:\/\/www.downdogsaltydog.com\/?p=405","title":{"rendered":"Asparagus Frittata"},"content":{"rendered":"<p><a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-3-26.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-406\" alt=\"photo 3 (26)\" src=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-3-26-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-3-26-300x225.jpg 300w, http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-3-26.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Oh Man!\u00a0 I love a good frittata!\u00a0 Some sweet friends showed up with a lovely batch of asparagus fresh from their family garden and I knew immediately what would be happening.\u00a0 A frittata!\u00a0 Thank you, Brian &amp; Karen!<\/p>\n<p>Although it sounds fancy, a frittata is just a baked omelet.\u00a0 Your frittata will only be as good as your eggs, so choose wisely.\u00a0 Connect with sources at your local farmers market or by asking around &#8211; you will be surprised how easy it is to find free pastured, local and sustainable eggs &#8211; and they have the most gorgeous orange yolks to boot!<\/p>\n<p>To create:<\/p>\n<p>1 medium onion, chopped<\/p>\n<p>1 bunch asparagus (12-15 medium stalks or 20+ pencil stalks), chopped in 1 inch pieces<\/p>\n<p>1 Tbsp bacon fat (or other natural fat like butter or coconut oil)<\/p>\n<p>3-4 sliced\u00a0bacon, crispy cooked, chopped fine<\/p>\n<p>10-12\u00a0eggs, beaten<\/p>\n<p>1\/2 &#8211; 1 cup finely shredded Colby jack cheese<\/p>\n<p>good salt and fresh ground black pepper<\/p>\n<p>Place an ovenproof skillet on medium low heat and add 1 Tbsp. bacon fat.\u00a0 When it&#8217;s loose enough to coat the pan, add chopped onion.\u00a0 Cook until soft and translucent.\u00a0 Add\u00a0asparagus and enough salt and fresh ground black pepper for the veggies in the pan.\u00a0\u00a0 Cook and stir\u00a0until the asparagus turns bright green.\u00a0 Add the bacon pieces and reduce heat to low.\u00a0 <a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-1-35.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-407\" alt=\"photo 1 (35)\" src=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-1-35-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-1-35-300x225.jpg 300w, http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-1-35.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Preheat oven to 350 degrees.\u00a0 While veggies have been softening, crack eggs into mixing bowl.\u00a0 Add 1 tsp. Himalayan or Celtic salt and 1\/2 tsp. freshly ground black pepper and whisk into eggs.\u00a0 Pour eggs into pan.\u00a0 Gently cook eggs until about half-set.\u00a0 Add desired amount of grated cheese and top with whole asparagus, if desired.\u00a0 <a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-2-33.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-408\" alt=\"photo 2 (33)\" src=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-2-33-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-2-33-300x225.jpg 300w, http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2014\/04\/photo-2-33.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Place pan into oven and watch closely.\u00a0 Once the eggs are almost set (maybe\u00a03-5 minutes) switch the broiler on.\u00a0 Broil until lightly brown.\u00a0 Remove immediately.\u00a0 Allow to set for at least 5 minutes before slicing into pie shaped wedges.\u00a0 <em>Give Thanks for Good Friends who\u00a0share\u00a0<\/em>and ENJOY!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh Man!\u00a0 I love a good frittata!\u00a0 Some sweet friends showed up with a lovely batch of asparagus fresh from their family garden and I knew immediately what would be happening.\u00a0 A frittata!\u00a0 Thank you, Brian &amp; Karen!
