Soup?"},"content":{"rendered":"<p>Soup?\u00a0 Why<em> soup<\/em>?<a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup4.jpg\"><img loading=\"lazy\" decoding=\"async\" (max-width: 225px) 100vw, 225px\" \/><\/a>\u00a0 Well, it&#8217;s completely delicious.\u00a0 And comforting.\u00a0 Not to mention the ginormous bonus that you can sneak in a really big portion of vegetables.\u00a0\u00a0You can get\u00a0fiber, phyto-nutrients (fancy talk for\u00a0plant\u00a0nutrients) and\u00a0flexibility with unlimited versions depending on what you have in your fridge, and what&#8217;s in season.\u00a0 We eat soup every day at our house.\u00a0 I think it&#8217;s one of the best ways to begin a meal.\u00a0 My friends\u00a0ask the question\u00a0&#8220;You eat soup <em>in the summer<\/em>?\u00a0 It&#8217;s so hot, already.&#8221;\u00a0 Uh huh.\u00a0 But we just don&#8217;t heat it up to scorching.\u00a0 If it&#8217;s a hot day, just take the chill off it and you get a different flavor experience than when it&#8217;s steaming.\u00a0 There are so many different ways to go but the start is the same.<\/p>\n<p>Start by choosing your fat.\u00a0 So many choices!!\u00a0 My preference is chicken fat.\u00a0 Don&#8217;t freak out.\u00a0 Fat is good as long as it&#8217;s a natural fat (=unadulterated).\u00a0 So, butter or a mix of butter and olive oil will work, too.<\/p>\n<p>Into a large soup pot, add 2 Tbsp of fat.\u00a0 Heat to medium and add in 1\/4- 1\/2\u00a0medium chopped onion, 2-3 chopped carrots and 3-4 sticks of celery,\u00a0chopped.\u00a0\u00a0Add salt 1tsp., 1\/2 tsp. black pepper and 1\/4 tsp. turmeric (you&#8217;ll never know it&#8217;s there and it will add beautiful\u00a0golden color to your soup)<\/p>\n<p>Put the lid on and cook the\u00a0veggies til tender,\u00a0about 15 mins.\u00a0 To this I add an entire head\u00a0of cauliflower, cut into chunks.\u00a0 Not huge pieces, just cut the core\u00a0out and\u00a0slice into about 10-12 approximately equal sized chunks.\u00a0 This way it will all be tender about the same time.<\/p>\n<p><a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-54\" alt=\"soup1\" src=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup1-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup1-225x300.jpg 225w, http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup1.jpg 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>Now, you need to add a liquid.\u00a0 I use chicken broth.\u00a0 Homemade or store bought, either will work.\u00a0 I try to use at least some\u00a0homemade because you cannot beat the flavor.\u00a0 You can use vegetable\u00a0broth\u00a0if you want to keep this vegetarian friendly.\u00a0 Add liquid to <em>almost<\/em> the top of the cauliflower, (approx. 4-6 cups, depending on the size\u00a0of your cauliflower)\u00a0leaving maybe an inch or so protruding out the top.\u00a0 This is because we like a thicker soup.\u00a0 Hey, if you like yours thin and runny, go on and add more liquid.\u00a0 Bring the whole thing to a boil and reduce to simmer with the lid on.\u00a0 Let it go for at least 30 minutes.\u00a0 Stir and see if the cauliflower is tender.\u00a0 Not reduced to mush, but tender.<\/p>\n<p>When it&#8217;s nice and tender (yields to spoon without disintegrating), turn off heat and put the lid back on.\u00a0 Let it sit for at least 30 minutes until it&#8217;s not going to burn you because here comes the fun part.\u00a0\u00a0 Whip out your immersion blender and blend until there are no chunks or bits.\u00a0 Start slow and then turn it on high and let your soup become creamy and smooth.\u00a0\u00a0 No immersion blender?\u00a0 No problem.\u00a0 Use your grandma&#8217;s hand-me-down\u00a0blender or food processor, working in batches so you don&#8217;t overload it.\u00a0<a href=\"http:\/\/www.downdogsaltydog.com\/wp-content\/uploads\/2013\/10\/soup2.jpg\"><img loading=\"lazy\" decoding=\"async\" (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Got the basics?\u00a0 Great!\u00a0 This is where it gets interesting.\u00a0 Do you\u00a0love garlic?\u00a0 Have some extra shallots on hand?\u00a0 Has your neighbor left a bag of squash on your porch?\u00a0 Awesome!\u00a0 Now you can make local and sustainable soup!!\u00a0 Need to use up some broccoli or cabbage?\u00a0 Perfect.\u00a0 We can use it.\u00a0 Got a cold?\u00a0 How about increasing the carrots (or use butternut squash) and add 1 Tbps. grated ginger make\u00a0a\u00a0lovely\u00a0carrot ginger soup?\u00a0 Basically, the sky is the limit.\u00a0 This summer I have been rich in zucchini and yellow squash.\u00a0 I haven&#8217;t bought cauliflower for my soup in months because I have been using the summer squash, thanks to my
